I love me a good steak from time to time, but we all know that red meat wreaks havoc on our digestive tracks for days. #TMIThursdays y’all. Luckily, I prefer seafood and this Tilapia recipe is perfect for eating healthy without skimping out on taste. Trust me, I’m Portuguese – I know my fish recipes.
4 Skinless, Tilapia Fillets (About 6 Ounces Each)
8-10 cherry tomatoes
3 Tablespoons Olive Oil
2 tablespoon fresh-squeezed lemon juice
1/4 Cup Salted Capers, Rinsed Well
2 cloves garlic, minced
2 tablespoon minced parsley
In a bowl: add minced garlic cloves to the olive oil and let stand for 5-10 minutes so the oil can absorb the flavor. Next, add lemon juice, parsley, and capers. Mix. Add in the fish and allow to marinate for 20-30 minutes.
Preheat the oven to 375 degrees F.
In a casserole dish or baking pan: add the filets and all of the marinade. Next, slice the cherry tomatoes in half and add them in there. Season with salt and pepper to taste. I sometimes add chili flakes too.
Cover the fish with foil and cook for 12-15 minutes. Remove the foil and broil for an additional 3-5 minutes.
Serve a fillet per person, garnish with tomato & caper mixture.
