Strawberry Balsamic Margarita

I remember the day I truly became an adult – it was the first time I appreciated the taste of an amazing, aged balsamic vinegar. Not only did I say goodbye to “Zesty Italian” for good, but I was sure balsamic was good enough to drink. Well, I learnt that a Strawberry Balsamic Margarita is much more acceptable than straight from the bottle.

Ingredients (4 servings)

2 pints fresh strawberries, cleaned and hulled

5 tbsp raw sugar

1.5 cups/12 ounces tequila

1/3 cup juice (orange, apple, grape – whatever you like!)

3 tbsp margarita mix (try making your own!)

4 tbsp balsamic vinegar

3 cups ice

Directions: Fill up your blender starting with the ice, then strawberries, sugar, tequila, margarita mix, juice and vinegar. Blend until nice and smooth! Sugar and balsamic can be added, so it’s a good idea to start with less and build up for your taste preferences.

If you’re serving to fancy pants guests, rim a couple of margarita glasses with sugar and a fancifully cut and skewed strawberry. Or just throw on your sunglasses, grab your longest silly straw, and get to work straight out of the blender cup.
