We know that not everyone has hours to make a killer five course meal. And we know that sometimes, you’re feeling like a nice, light dish (usually right after that killer five course meal, no?). Well, we have just the dish for you! Quinoa Tabbouleh makes a tasty side, or a great packed lunch. The best part? You’re only a few ingredients and 15 minutes from enjoying it!
1/2 cup quinoa
1 cup water
2 tbsp lemon juice
2 tbsp extra virgin olive oil
1 bunch flat leaf parsley
3 green onions, diced
1/2 cup almonds, whole or sliced
Fresh cracked pepper
To cook the quinoa: In a saucepan, add water and quinoa, cover and bring to a boil. Reduce heat and cook on low for 15 minutes, or until quinoa reaches a consistency you like.
To make the dressing: Combine lemon juice and olive oil, and season to your liking with salt and pepper.
To assemble: Chop the parsley stalks and leaves, and add to the quinoa. Toss with onions, almonds and dressing and serve!
This simple dish combines classic flavours with easy preparation for something you’ll no doubt want seconds of! Concur quinoa, and try your best to pronounce it right- Keen-wah!
