Tired of Mimosas? Bored with Bloody Marys? Here’s a different way to drink your breakfast.

The Morning Glory Fizz isn’t a new cocktail, but it’s one you’ve likely never heard of. In his 1888 Bartender’s Manual, famed mixologist Henry Johnson wrote that the potation is “a grand picker-upper and will give a good appetite and quiet the nerves.” Whatever your reason for drinking Scotch and absinthe during daylight hours — you lush, you! — this tipple won’t disappoint.

Morning Glory Fizz

2 oz. Scotch
1/2 oz. lemon juice
1/2 oz. lime juice
1/2 oz. simple syrup
1 egg white
3-4 dashes absinthe
soda water (to top)
lemon or orange twist (for garnish)

Directions: Add fruit juices, simple syrup, and egg white to a cocktail shaker. Shake without ice to emulsify the egg white. Add Scotch, absinthe, and ice and shake vigorously. Top with soda water. Strain into an Old Fashioned glass. Run twist around the rim of the glass, then drop it in. Serve immediately.
