- ¼ cup of ginger, peeled
- 1/2 cup sugar
- 1/2 cup water
- 2 cups of sweet champagne
- 1.5 cups of sparkling water
- ¾ cups lime (or lemon) juice
Making ginger simple syrup is easy. Bring to a boil the ginger, sugar, and water, stirring to make sure the sugar is dissolved. Allow to cool, then add to a jug. Pour in the lime juice, champagne, sparkling water and give it a light stir. Garnish with herbs, thyme or basil.
Slap some music on, grab a duster and get cleaning. The days are looking brighter… but that might be the booze talking.
