It used to be that the ingestion of pizza was left in the hands of delivery boys. We were forced to devour cold triangles of the sacred treat, until the invention of the pizza pocket. Then, a microwave became our purveyors, nuking pockets of gold. Now, the taste of a great pizza and the convenience of a great pocket can be yours at home. Calzones rock!
1 batch of Nadia G’s pizza dough
2 cups pizza sauce
4 cups cheese, shredded (use your fav!)
3 cups fresh toppings, diced (veggies, cooked meat)
Egg wash (1 egg + 2 tablespoons water)
Begin by following G’s pizza dough recipe from Dysfunctional Family Pizza Night. Once risen, preheat over to 350 degrees F.
Split the dough into 6 pieces and using a rolling pin to shape each ball in to 4 inch circles that are about a quarter inch thick. Working on one half of the circle, top with sauce, toppings and cheese. Fold the opposite side over, making a pocket and ensuring it’s not too full to seal. Crimp the edges with a fork so they’ll look cool and avoid popping open! Transfer stuffed calzones on to a baking sheet and coat with egg wash. Bake for 20-25 minutes, until you see them brown and they become crispy.
We’ll take one in each hand, and still probably be unsatisfied. What will you stuff yours with?
