Merry Christmas all! Have 30 minutes to spare and a craving for something chocolate? Well, you’re three ingredients away from a big old tray of reindeer poop. And these are vegan AND gluten free. Bonus! I’ve totally gotten meatatarians to enjoy these, mostly because they’re chocolate but also because the temptation of something that won’t make you more “jolly” is irresistible. These are about as healthy and easy as cookies get folks.
The “Damn these are easy and healthy” Reindeer Poop Truffles
Ingredients (1 dozen large, 2 dozen small)
1 cup unsalted cashews
1 cup pitted dates (fresh or dried)
3/4 dark chocolate (for melting)
1/2 chopped dark chocolate (for stuffing)
Begin by grinding cashews in a food processor until fine, not flour dust. Then add dates, and continue combining until sticky (add 1 tsp of water at a time if It’s not sticking – dried will need water for sure, fresh might not). Then, roll in to balls, stuffing with small piece of chocolate and let harden on a parchment lined cookie sheet in the fridge/freezer. Use a double boiler method melt 3/4 dark chocolate, and use a spoon to coat balls, placing back on the lined cookie sheet and storing in the fridge again. Once hardened, these can be stored in an air tight container.
If you’re afraid of serving “poop,” go the coal route. Whether you’re baking alone or hosting a baking get together, don’t forget to have fun in the kitchen! Throw on some cheesy Christmas tunes, your most obnoxious apron and put some real love in to what you make. No one isn’t going to be thankful for that this time of year.
