Pumpkin Gnocchi With Caramelized Onions

In a month we’ll be carving scary faces into them, but pumpkins are for more than just pie and scaring the pants off of vulnerable trick-or-treaters. They’re super nutritious and an awesome source of fiber. Plus, the orange color is really pretty and a perfect way to ring in fall.

Don’t worry though, this isn’t one of those scary health recipes that your tree-hugging old highschool friend would tell you was a ‘hit’ at the commune he lived in, it’s actually good! This dish has got enough butter and parmesan to drown a small army! As Nadia G always  says: everything in moderation, especially moderation!
